In the arev app the users could use the Export utility.

What would be the correct way to do this in OI?

They like the option of selecting table names and fields and sorting on themselves.

I have suggested that my contact try investigating the C/S Workspace but they feel it is to cumbersome for them as just a power user.

The Data Warehousing feature in the Client/Server Workspace is the most generic "export" style process in OpenInsight. If you are looking for a simpler export, you could use a similar concept but use Connection Objects directly with dynamic SQL scripts.
