Are there any technical issues with running the database server or AREV application in any sort of virtualized environment (such as on an ESXi/vShpere server) that we should be aware of?

Arev will probably work but you may need to evaluate any special port, printer, and external device connections for things like cash drawers and barcode scanners. You're likely to have the same CPU usage spike that you see on a regular AREV on Windows setup.
Arev32 and OpenInsight should run even better in a virtual environment.
The underlying virtual environment should be fast enough to handle the I/O operations for the site when it is under load. The LinearHash service can be very I/O disk intensive and benefits greatly from RAID controller cache. If the virtual environment isn't able to support the load you'll run into performance problems. You may see a performance hit if your virtual server's disk storage is on a SAN with disk access times ] 10ms.
